Corn Casserole

Easter is only a couple of weeks away. If you are planning your Easter dinner menu, this easy corn casserole would make a perfect side dish. It even goes great with ham.

The Story

Spring is in the air, which means summer is around the corner. The best thing about living in Iowa in the summertime is fresh corn.

When you live in Iowa, fresh corn is easy to find. It’s in the grocery store, at farmers’ markets and even for sale on street corners out of the back of pick-up trucks. Fresh corn on the cob can’t be beat. It’s best grilled while still in the husk. It’s even good boiled and served with lots of butter.

But alas, it is not quite summer yet. Canned corn is all that is available now, even in Iowa. Fortunately you don’t need to live in Iowa or have fresh corn to make this tasty baked corn casserole.

Local ingredients make the best dishes. Wherever you live, make the most of your local ingredients to make the most of whatever you cook or bake.

This casserole is a family favorite. My mother-in-law taught me to make it, and we have it at almost every holiday meal.

The Play-by-Play

Preheat the oven to 350 degrees, and grease an 8×8 baking dish with shortening.

In a large bowl, mix together the cream corn, butter, onion, crackers, pepper and milk.

Summary: An easy baked and buttery corn cracker casserole

Ingredients

1 (14.75 ounce) can cream style corn
1 medium onion, chopped
1 package saltine crackers, crushed
1 stick unsalted butter, cut into chunks
Pepper to taste
1-2 tablespoons milk

Instructions

  1. Preheat the oven to 350 degrees. Grease an 8×8 glass baking dish with shortening.
  2. In a large bowl, mix the cream corn, chopped onion, crushed crackers, butter, pepper and milk.
  3. Spread the mixture into the baking dish and bake for 1 hour.

The Footnotes

  • About the cracker crushing: This is the most therapeutic part of making this recipe. Take out the stress of the day by crushing the crackers by hand. You could go the easy route and put them in a food processor. It just isn’t as gratifying as smashing them by hand. To avoid a messy situation of cleaning up cracker crumbs, keep the saltines in their wrapper and place them in a zip lock bag. Grab your favorite meat tenderizer and begin smashing. Here’s the key: Use the flat side of the tenderizer, not the pointy side. Otherwise, you end up poking holes in your plastic bag and getting cracker crumbs all over your kitchen.
