The perfect recipe for a summer celebration includes: 1) sunshine, 2) friends or family and 3) pineapple cookies. These cookies are bright and warm, like the summer sun.

The Story

We celebrated Father’s Day with Ken’s dad and grandfather a bit late this year. They happened to be out of town on Father’s Day. When we did get together to celebrate a couple of weeks later, I was short on ideas for the perfect gift.

Whenever I run out of gift ideas, I give homemade cookies. For my dad’s birthday, I gave him a batch of chocolate cherry chip cookies because his favorite candy is chocolate covered cherries. For Father’s Day, I gave Ken’s dad Brazilian coffee cookies because he loves coffee. I gave his grandfather these pineapple cookies because, as you probably guessed, he loves pineapple.

We got together at Ken’s parents’ house to celebrate. His mom made the most incredible peach cobbler. It was more like a pie than cobbler, with a flaky, pie-like crust on top. I brought these pineapple cookies. They were more like little cakes than cookies, with a moist and cake-like texture. While the cookies paled in comparison to the cobbler, I still think they were good. Ken’s grandfather enjoyed them anyway.

The Moral of the Story

The best gifts really are homemade.

The Play-by-Play

If you are using a fresh pineapple, you’ll need to cut it up. First, cut off the top.

Then cut off the bottom.

Slice the pineapple into two halves lengthwise.

Next, cut it into quarters.

Cut off the cores.

Remove the outer shell.

Cut the pineapple into chunks.

Then dice into small pieces.

Now, start making the cookie dough. Blend together shortening, sugar and eggs.

Mix in the diced pineapple.

In another bowl, mix together your dry ingredients.

Blend the dry ingredients into your batter.

Add a little shredded coconut if you have it.

Wrap the dough in saran wrap and chill it for a few hours.

Once chilled, scoop the dough into balls onto a cookie sheet.

Bake for 8 to 10 minutes, or until golden brown.

Let them cool on the cookie sheet for 2 minutes, and then remove them.

Place them on a rack to cool completely.

Then enjoy! They go well with candy pineapple too.

The Footnotes

  • About the batter: It is more like cake batter than cookie dough. I might try making it into cupcakes next time.
  • About the pineapple: You could use canned pineapple, but I think the fresh pineapple gives the cookies a great fresh flavor.

  1. Seattle is a little lacking in the sunshine department right now but I do have friends and family and I am so hoping to have these cookies really, really soon! I love that you used fresh pineapple.

    1. Hope you see a little sun soon in Seattle. At least there are friends, family and cookies to brighten your day in the meantime. We almost have too much sun this week in Iowa – with 90 degree temps too. Think I need a cold glass of lemonade with my next cookie. 🙂
