Lemon Blueberry Pound Cake

by Lori on August 8th, 2011

If life gives you lemons, you make lemonade. If life gives you lemons and blueberries, you make lemon blueberry pound cake.

The Story

Ironically, the song “Lucky” is playing in the background as I write this post. Luck was not with me last week. I think a black cat crossed my path when I wasn’t looking. It was just a week of lemons, so to speak.

By the weekend, things took a turn for the better. Saturday morning, Ken and I had a perfect trip to the farmers’ market. The weather was finally cool, the coffee was warm, and the blueberries were at their peak. I grabbed a pint to take home.

The next morning, I used my blueberries and some lemon simple syrup to make this delicious lemon blueberry pound cake. It is the perfect recipe for breaking the blues.

The Moral of the Story

Don’t let a bad week get you down. Make life a little sweeter by baking a pound cake.

About the Recipe

I found the recipe for Lemon Blueberry Pound Cake from The Friday Friends. However, I used a different lemon simple syrup recipe. The syrup recipe I used was from this Watermelon Sorbet recipe on

Cast of Characters

The blueberries play a key supporting role in this production.

The Play-by-Play

Fold in half the blueberries in the batter.

Spread half the batter into a loaf pan and top with the rest of the blueberries.

Cover the berries with the remaining batter.

Bake for 1 to 1 ½ hours, or until golden brown.

Pierce cake all over with a wooden skewer.

The Footnotes

  • About the baking time: Keep an eye on it. It may take more or less time to bake, depending on your oven. The original recipe called for baking an hour and a half. Mine was done after an hour.
  • About the simple syrup: Use only about ½ cup. It was just the right amount to moisten the cake, but not make it soggy.

What’s your favorite thing to bake to beat the blues?

  1. I love blueberry cake in any form, this looks great!
