Lemon Blueberry Pound Cake

The Story

Ironically, the song “Lucky” is playing in the background as I write this post. Luck was not with me last week. I think a black cat crossed my path when I wasn’t looking. It was just a week of lemons, so to speak.

By the weekend, things took a turn for the better. Saturday morning, Ken and I had a perfect trip to the farmers’ market. The weather was finally cool, the coffee was warm, and the blueberries were at their peak. I grabbed a pint to take home.

The next morning, I used my blueberries and some lemon simple syrup to make this delicious lemon blueberry pound cake. It is the perfect recipe for breaking the blues.

About the Recipe

I found the recipe for Lemon Blueberry Pound Cake from The Friday Friends. However, I used a different lemon simple syrup recipe. The syrup recipe I used was from this Watermelon Sorbet recipe on Food.com.

Mix together the butter and sugar.

Stir in the eggs, one at a time.

Add milk, vanilla and lemon zest.

Mix in the flour, baking soda and salt.

Toss the blueberries in flour.

Pour simple syrup over the cake, and let cool for 10 minutes.

Remove the cake from the pan to cool completely. Then slice and enjoy!

The Footnotes

  • About the baking time: Keep an eye on it. It may take more or less time to bake, depending on your oven. The original recipe called for baking an hour and a half. Mine was done after an hour.
  • About the simple syrup: Use only about ½ cup. It was just the right amount to moisten the cake, but not make it soggy.
