I joined Daring Bakers. If you haven’t heard of Daring Bakers, it’s an online baking club where the members bake a new recipe each month. This month is baklava. I made mine with candied fruit and toasted nuts, similar to a fruitcake — and I learned you have to be a bit of a fruitcake to make baklava from scratch.
This recipe should be called Cranberry Cherry Chocolate Chip Coconut Pecan Honey Maple Peanut Butter Chewy Granola Bars, but that is quite a mouthful. In short, I cleaned out my pantry. Never before has spring cleaning tasted so good.
If you want a pan that can do just about anything, get a cast iron one. It can fry a steak, sauté veggies, simmer a stew and even bake a cake! It does especially well with pineapple upside down cake. It bakes the cake evenly inside and creates a nice crunchy outside. If it is well-seasoned, the pan will even let the cake slide hassle-free from it. Now if only the pan could clean up after itself.
I cannot tell a lie. I baked the cherry chocolate chip coffee cookies. I promise I did not chop down a cherry tree to make these cookies. I used dried tart cherries from the grocery store. However, I did steal the last cup of coffee to make them.
Is life like a box of chocolates or a bowl of cherries? It probably depends on who you ask. Forrest Gump said chocolates. Erma Bombeck may have said cherries. I like to think life is like a bowl of chocolate cherry chip cookies.
